This is just a little inspiration.

With a few cherry tomatoes, some spinach leaves, some shavings of courgette, and a little butter or olive oil you can throw this together in 5 or 10 minutes.

I serve this with steak, chicken, fish, halloumi, prawns, or chickpeas.

INGREDIENTS
Vegetables
Cherry tomatoes
A handful of spinach leaves
Courgette, washed and slice thinly with a vegetable peeler.

Fat
1 tablespoon olive oil or butter

Condiments
Salt and pepper

METHOD
Heat a pan on a medium heat. Add olive oil or butter. Add cherry tomatoes. Place a lid or a plate over the tomatoes. Cook for 5 – 10 minutes, or until the tomatoes are starting to burst. Remove the lid.

Add the courgette slivers and spinach. Season with salt and pepper.

Cook for a further few minutes until the spinach starts to wilt.
