I promised a few clients that I would share this recipe. Here it is…

TOMATO SALSA
A super versatile veg option that works well with grilled fish, steak, chicken, halloumi, or as part of a salad.

As you practice making it you will learn what you like – you may have a preference for parsley over coriander or lime over lemon juice. Go easy on the garlic at the start as this can be overpowering.

I used red and yellow tomatoes, but any will do as long as they are good and ripe. Cherry tomatoes work well too.

INGREDIENTS

Vegetables
1-2 cups tomatoes, chopped
1 tblsp red or yellow onion, finely sliced
1 small clove garlic, finely chopped
1-2 tablespoons chopped parsley or fresh coriander

Condiments
1-2 teasp of balsamic vinegar (optional)
1-2 teasp lime juice – lemon juice works too
A pinch of salt and pepper

METHOD

Mix all the ingredients together.

It is best used on the day it is made.
